1 cup red kidney beans
1 cup fresh diced tomatoes
1 cup diced green peppers
1 cup diced red peppers
1 cup feta cheese, crumbled
1/4 cup red onion, chopped
1/2 tsp. dried oregano
2 tbsp olive oil
1 tbsp lemon juice or wine vinegar
Mix all ingredients together except for the feta cheese. Prepare ahead to let the flavours mix. Add Feta cheese just before serving.
